This months recipe comes from Ellen Sundberg of Minnesota. Ron Fischer shared her honey fudge brownie recipe in the March issue of “The Buzz” and wanted to share her oatmeal Raisin Cookie recipie as well.
HONEY OATMEAL RAISIN COOKIES
- ½ cup shortening
- ½ cup brown sugar
- 2 eggs
- ¾ cup honey
Add:
- 1 ¾ cup flour
- 1 ¾ cup oatmeal
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tsp nutmeg
Mix well
Take one cup raisins , cover with water and boil for 5 minutes
Add raisins and 3 tablespoons of the boiling water to the above mixture.
Drop by teaspoon on an ungreased cookie sheet (or parchment lined sheet)
Bake at 350*F approximately 8 to 10 minutes or until lightly browned.
